ChefFabien Vergé

Fabien, a French chef with over 20 years of extensive experience, was born in Côte d'Ivoire, Africa. He once worked at the Michelin three-star French fine dining restaurant "Le Meurice," where he mastered the exquisite skills under the tutelage of renowned chef Yannick Alléno. At the age of 25, Fabien ventured out on his own and opened the French restaurant "La Cocotte" in Taipei, which was awarded a Michelin star in 2018. After earning the star, Fabien decided to return to his birthplace, Côte d'Ivoire, with his wife, to savor life and return to the essence, the pursuit, and the sharing of his original intentions.

Throughout his culinary journey, Fabien has adhered to three core elements, which have given his dishes a unique style: Essentiel (Essence) – emphasizing the essence of ingredients and adhering to traditional French culinary techniques to present pure flavors to diners; Voyager (Journey) – his diverse background and travel experiences have inspired his culinary creations, leading him to perfectly blend the culinary essences of Pais Vasco, Catalunya, and various other cuisines into his French haute cuisine; and Partage (Sharing) – Fabien's childhood memories of sharing delicious meals with his family at the dining table have inspired him to create an atmosphere where guests can share exquisite food and lively conversations, creating unique memories.
